1 fresh fennel bulb, tops removed
¼ tsp sea salt
¼ tsp freshly ground black pepper
- Preheat oven to 400F.
- Cut fennel bulb into quarters. Season with salt and pepper.
- Place on baking pan and roast for about 20 minutes, or until fennel just begins to brown.
- Add ½ cup water to pan and cover with aluminum foil. Return to oven and continue to roast until soft, about 20 minutes.
