Ingredients 

Dressing
2 Tbsp prepared horseradish
2 Tbsp cider vinegar
2 Tbsp low-fat sour cream
½ Tbsp canola oil
½ tsp cane sugar
½ tsp sea salt

2 cups shredded carrots
¼ cup thinly sliced red onions
1 tsp chopped fresh parsley

Instructions 
  1. In a large bowl, whisk together dressing ingredients.
  2. Shred carrots, place in cheesecloth and squeeze to remove any excess liquid.  Add carrots, onions and parsley to dressing and toss until evenly coated.
