Nutrition Information (per serving)
1 can water-packed light tuna, drained, about 6oz
2 Tbsp minced red bell pepper
2 Tbsp minced yellow bell pepper
2 Tbsp sweet pickle relish
2 Tbsp minced celery
2 Tbsp canola oil mayonnaise
½ tsp Dijon mustard
Pinch sea salt
Pinch freshly ground black pepper
1 tablespoon whole grain mustard
1 tablespoon Dijon mustard
1 teaspoon honey
½ tsp Coleman’s dry mustard
1½ tsp plain lowfat yogurt
4 slices rye bread
4 slices Swiss cheese, 1 oz each
- Combine all ingredients for tuna salad in a medium bowl and mix well.
- In a small bowl or cup, combine all ingredients for mustard sauce.
- Spread ⅓ cup tuna salad on one slice of rye bread. Top with 1 tablespoon Mustard Sauce and 1 slice of cheese. Repeat with remaining ingredients. Place under broiler for 1 to 2 minutes, or until cheese melts.
