Ingredients 

Tomato Orange Salsa
½ cup diced orange segments
1 cup diced tomatoes
¼ cup diced onions
¼ cup diced yellow bell peppers
1 Tbsp fresh lime juice
¼ cup chopped fresh cilantro
½ tsp sea salt
½ tsp cane sugar

Avocado Puree
½ cup mashed avocado
2 Tbsp chopped yellow bell peppers
¼ cup chopped red onion
2 Tbsp chopped tomato
2 Tbsp fresh lime juice
¼ cup water
½ tsp minced garlic
½ tsp sea salt

1 lb tilapia fillets, cut into 4 equal portions
¼ tsp sea salt
¼ tsp freshly ground black pepper
1 Tbsp extra virgin olive oil

Instructions 
  1. In a medium bowl, combine all ingredients for Tomato Orange Salsa and mix well.
  2. In a blender container, combine all ingredients for the Avocado Puree and puree.
  3. Season fish with salt and pepper. In a large sauté pan, sauté in olive oil about 3 to 5 minutes on each side, or until cooked through. Serve 1 fish fillet with ⅓ cup Tomato Orange Salsa and ¼ cup Avocado Puree.
