Pan-Seared Scallops with Garlic & Chive Sauce

Ingredients 

1 lb large scallops
2 tsp extra virgin olive oil

Garlic and Chive Sauce
1 tsp chopped chives
1½ Tbsp minced garlic
1 Tbsp fresh lemon juice
2 tsp extra virgin olive oil
3 Tbsp white wine

Instructions 
  1. Lightly spray a large sauté pan with olive oil. Sauté scallops over medium heat until cooked through, about 2 to 3 minutes on each side. Do not overcook. Remove and set aside
  2. In a small bow, combine chives, garlic, lemon juice, olive oil and white wine.
  3. In a saucepan, add garlic chive sauce and bring a boil reduce heat to a simmer. Simmer until liquid is reduced by half.
  4. Serve 3 scallops with 1½ teaspoons sauce.
