Ingredients 

1 lb fresh hearts of palm
2 papaya or mango, fresh

Dressing
1 Tbsp extra virgin olive oil
½ tsp thyme, fresh, chopped
¼ cup chopped shallots
1 Tbsp Dijon mustard
¼ tsp chopped fresh garlic
4 Tbsp champagne vinegar
2 Tbsp water
¼ tsp sea salt
¼ tsp cane sugar

Instructions 
  1. Peel the outer layer of hearts of palm, and thinly slice. Peel and slice papaya.  
  2. Combine all salad dressing ingredients and puree in blender. Toss sliced hearts of palm with salad dressing. Serve ¼ cup sliced hearts of palm with 3 to 4 slices of papaya.
