Nutrition Information (per serving)
¼ cup sherry vinegar
1 Tbsp extra-virgin olive oil
2 Tbsp fresh chopped chives
1 tsp cane sugar
½ tsp sea salt
¼ tsp freshly ground black pepper
4 cups thinly sliced fennel
1 cup dried cherries
1¼ cup mixed greens
- In small bowl, combine all ingredients for dressing and mix well.
- In a medium bowl, combine fennel, cherries and dressing, and toss together.
- Place ¼ cup mixed greens in the center of the plate and top with 1 cup fennel and cherries.
