1 lg potato, baked
¼ cup peeled and chopped apple
6 oz cooked turkey breast
¼ cup diced red onion
2 tsp canola oil
¼ cup dried cranberries
¼ tsp dried thyme
½ tsp dried parsley
¼ tsp freshly ground black pepper
½ tsp sea salt
- Combine all ingredients in a food processor and chop until all pieces are about the size of peas.
- Form into 4 patties. Lightly coat a large sauté pan with canola oil. Heat canola oil over medium heat until pan is hot.
- Place patties in hot sauté pan and cook over medium heat until browned, about 2 minutes on each side
