1½ cups ground multi-grain flakes
½ tsp ground cinnamon
½ tsp chopped fresh rosemary
¼ cup chopped fresh parsley
½ tsp freshly ground black pepper
Pinch sea salt
¼ cup canola oil mayonnaise
½ cup nonfat plain yogurt
6 4-oz skinless boneless chicken breasts
1 Tbsp extra virgin olive oil
- Preheat oven to 400F.
- In a medium bowl, combine flakes, cinnamon, rosemary, parsley, black pepper and salt. Set aside.
- In a small bowl, combine mayonnaise and yogurt, and mix well to combine.
- Coat each chicken breast with mayonnaise yogurt mixture and dredge in spice mixture.
- Lightly coat a shallow baking dish with olive oil. Arrange chicken breasts in dish and bake for 15 to 17 minutes, or until juices run clear when pierced with a fork.
