Ingredients
Mushroom Broth
1 oz unsalted butter
1 cup diced yellow onions
1 tsp minced garlic
1 lb sliced mushrooms
1½ cups chicken stock
10 oz white wine
1 Tbsp fresh thyme, chopped
1 tsp marjoram
½ tsp sea salt
1/4 tsp ground black pepper
1½ lb rainbow trout
½ tsp sea salt
½ tsp freshly ground black pepper
Instructions
- To prepare sauce, melt butter in pan. Add onions and garlic. Sauté to 5 minutes. Add mushrooms and cook for 10 minutes. While stirring, add chicken stock, wine, pepper and salt. Simmer for 10 minutes. Finish by adding thyme and marjoram.
- Season trout with salt and pepper. Brush lightly with olive oil and grill. Serve each piece of trout with 6 ounces of mushroom sauce.
