Ingredients
½ cup natural peanut butter
Pinch sea salt
1 Tbsp cane sugar
1 Tbsp lite coconut milk
1 Tbsp fresh lime juice
1¼ tsp fresh ginger juice
½ tsp rice vinegar
½ tsp fish sauce
Dash Tabasco sauce
½ cup water
1 Tbsp low-sodium tamari sauce
Instructions
- Place peanut butter in a small bowl. Add salt and sugar and mix until almost dissolved. Add coconut milk, lime juice, ginger juice, rice vinegar, fish sauce and Tabasco. Mix well to form a thick paste. Using an electric stand mixer is an excellent option.
- In a small saucepan, combine water and tamari and bring to a boil. Whisk in peanut butter mixture. Cook until mixture begins to thicken. Remove from heat.
- Serve 2 tablespoons sauce with pasta or as a dipping sauce for chicken kebabs.
