Nutrition Information (per serving)
1½ tsp extra virgin olive oil
4 red bell peppers, seeded and chopped
⅔ cup thinly sliced carrots
1 cup diced, drained, canned tomatoes
⅓ cup tomato puree
1 tsp minced garlic
⅛ tsp freshly ground black pepper
½ cup peeled and chopped fresh pears
½ tsp fresh diced basil
- Heat olive oil in a large saucepan. Add peppers and carrots and sauté until soft. Add tomato,tomato puree, garlic, pepper, pears and basil. Reduce heat and simmer for 30 minutes, or until vegetables are soft. If mixture is too thick, add a small amount of water or vegetable stock.
- Remove from heat and cool slightly. Place in blender and puree until smooth.
