Ingredients
3 Red Delicious Apples
1 Tbsp pure maple syrup
1 Tbsp rolled oats
3 tsp unsalted butter
½ tsp ground cinnamon
¼ tsp pure vanilla extract
2 Tbsp brown sugar
4 Tbsp chopped walnuts
¼ tsp pure vanilla extract
1 tsp powdered sugar
2 Tbsp heavy cream
6 sprigs fresh mint
Instructions
- Preheat oven to 350F.
- Wash and core apples. Slice each one lengthwise and hollow out center to create a cavity for the stuffing.
- In a small mixing bowl, combine syrup, oats, butter, cinnamon, vanilla, brown sugar and walnuts. Place 1½ teaspoons of filling in each apple.
- Bake for 30 to 45 minutes until firm but tender. Let apples sit for at least 10 minutes.
- Combine vanilla, powdered sugar and heavy cream. Whip together with whisk until soft peaks form.
- Place apple on plate and top with ¼ tablespoon of cream and garnish with a sprig of mint.
