Walnut Stuffed Apple

Ingredients 

3 Red Delicious Apples
1 Tbsp pure maple syrup
1 Tbsp rolled oats
3 tsp unsalted butter
½ tsp ground cinnamon
¼ tsp pure vanilla extract
2 Tbsp brown sugar
4 Tbsp chopped walnuts
¼ tsp pure vanilla extract
1 tsp powdered sugar
2 Tbsp heavy cream
6 sprigs fresh mint

Instructions 
  1. Preheat oven to 350F.
  2. Wash and core apples. Slice each one lengthwise and hollow out center to create a cavity for the stuffing.
  3. In a small mixing bowl, combine syrup, oats, butter, cinnamon, vanilla, brown sugar and walnuts. Place 1½ teaspoons of filling in each apple.
  4. Bake for 30 to 45 minutes until firm but tender. Let apples sit for at least 10 minutes.
  5. Combine vanilla, powdered sugar and heavy cream. Whip together with whisk until soft peaks form.
  6. Place apple on plate and top with ¼ tablespoon of cream and garnish with a sprig of mint.
