Poached Pear with Chocolate Mousse

Ingredients 

5 Bartlett pears, peeled
3 cups white grape juice
1 cup Poire Williams pear liqueur
1 vanilla bean
⅔ cup Chocolate Mousse
5 tsp sliced almonds

Instructions 
  1. Combine juice, liqueur and vanilla in a saucepan and bring to a rapid boil. Pour boiling liquid over pears in a glass baking dish and store in refrigerator while preparing mousse.
  2. Prepare mousse.
  3. Remove pears from liquid and cut away a small slice at the bottom of each pear so that they can sit upright on plates. Also cut off the top ¼ of each pear and save. Using a melon baller, core and hollow out each pear to form a cup.
  4. Fill each hollowed-out pear with 2 tablespoons mousse. Return pear tops so that mousse is covered. Place pear on plate and garnish with 1 teaspoon of slivered almonds and any remaining juice-liqueur mixture.
