Ingredients 

4 egg yolks     
¾ cup fresh orange juice   
2 Tbsp cane sugar
1 Tbsp orange zest      
¼ tsp cinnamon    
½ tsp pure vanilla extract    
4 egg whites     
2 Tbsp cane sugar

Instructions 
  1. Preheat oven to 350F. Spray individual 6-ounce soufflé dishes with canola oil spray, dust with sugar and set aside.
  2. Using an electric mixer, whip egg yolks, orange juice, the first amount of sugar, orange zest, cinnamon, and vanilla extract until thickened and lemon yellow in color. 
  3. In a small bowl, whip egg whites and the second amount of sugar until soft peaks form. Gently fold whites into the orange mixture.
  4. Ladle ¾ cup of mixture into each soufflé dish. Bake for 12 to 15 minutes, or until soufflé has risen and is slightly golden on top. Dust with powdered sugar (optional) and serve.
