Key Lime Pie

Ingredients 

1 cup crushed graham crackers
4 egg yolks
½ cup fresh key lime juice (approx. 10 key limes)
1 14-oz can sweetened condensed milk

Instructions 
  1. Preheat oven to 325F. Spread graham cracker crumbs in bottom of a 9-inch pie pan. Wet with a little water and press graham crackers firmly into pie shell to form a crust.
  2. In a large bowl, using a hand held mixer, whip egg yolks and lime juice on high until doubled in size and lemon yellow in color. Add condensed milk and mix on low speed until ingredients are combined. Do not over mix. Pour into prepared pie shell. Bake pie for 15 to 20 minutes, or until the center of the pie is almost set. Let cool and refrigerate before serving.
