4 egg yolks
½ cup fresh key lime juice (approx. 10 key limes)
1 14-oz can sweetened condensed milk
- Preheat oven to 300F.
- In a large bowl, using a hand held mixer, whip egg yolks and lime juice on high until doubled in size and lemon yellow in color. Add condensed milk and mix on low speed until ingredients are combined. Do not over mix. Pour into 8 individual custard dishes.
- Bake for 10 to 15 minutes, or until a toothpick inserted in the center comes out clean.
- Refrigerate for 2 to 3 hours before serving.
