Nutrition Information (per serving)
1¼ cups 2% milk
¼ cup cane sugar
½ vanilla bean, scraped
1 Tbsp minced fresh ginger root
3 egg yolks
- In a small saucepan, combine milk, sugar, vanilla bean and ginger. Bring to a very low simmer over medium heat, stirring constantly.
- Place egg yolks into small bowl. Add a small amount of hot milk mixture immediately to egg yolks to temper, then return egg yolk mixture to simmering milk and continue stirring. Cook until thickened, but do not boil.
- Remove from heat and let cool slightly. Strain through a fine mesh strainer into a small bowl. Place in an ice bath to cool rapidly.
