Ginger Crème Anglaise

Ingredients 

1¼ cups 2% milk
¼ cup cane sugar
½ vanilla bean, scraped
1 Tbsp minced fresh ginger root
3 egg yolks

Instructions 
  1. In a small saucepan, combine milk, sugar, vanilla bean and ginger. Bring to a very low simmer over medium heat, stirring constantly.
  2. Place egg yolks into small bowl. Add a small amount of hot milk mixture immediately to egg yolks to temper, then return egg yolk mixture to simmering milk and continue stirring. Cook until thickened, but do not boil.
  3. Remove from heat and let cool slightly. Strain through a fine mesh strainer into a small bowl. Place in an ice bath to cool rapidly.
