Nutrition Information (per serving)
3 cups pears, peeled, cored and diced
½ cup dried cranberries
2 Tbsp cane sugar
¼ tsp ground nutmeg
¼ tsp ground cinnamon
1 Tbsp unsalted butter, softened
¼ cup whole wheat flour
1 Tbsp brown sugar
1 Tbsp canola oil
½ tsp ground cinnamon
½ tsp ground nutmeg
1½ tsp honey
½ cup rolled oats
- Preheat oven to 400F. Lightly coat 6 ceramic ramekins with canola oil spray.
- In a large bowl, mix together pears, cranberries, sugar, nutmeg and cinnamon until well combined.
- In a small bowl, mix together all ingredients for the topping.
- Fill each ramekin with ½ cup pear mixture then top with 2 tablespoons of topping. Bake for 8 to 10 minutes, or until topping is light golden brown. Serve warm.
