Nutrition Information (per serving)
1 cup 2% milk
¼ cup cane sugar
½ whole vanilla bean
2 oz brewed coffee
3 egg yolks
- In a large saucepan, combine milk, sugar, vanilla bean and coffee and bring to a simmer over medium heat, stirring constantly. Remove vanilla bean, cut open lengthwise with a sharp knife and scrape pods into sauce.
- Place egg yolk into small bowl. Add a small amount of hot milk mixture, about ½ cup, to egg yolk to temper, then return to simmering milk. Cook for 1 more minute. Remove from heat and let cool. When room temperature, cover and place in refrigerator to chill.
