⅓ cup semi-sweet chocolate pieces
2 Tbsp unsalted butter
1½ Tbsp canola oil
¾ cup cane sugar
¼ cup cocoa
2 Tbsp unsweetened applesauce
2 egg whites
⅔ cup all-purpose flour
½ tsp baking powder
Pinch sea salt
½ cup dried tart cherries
- Preheat oven to 325F. Lightly coat an 8-inch by 8-inch pan with canola oil spray and set aside.
- In a medium saucepan over low heat, melt chocolate, butter and oil. Remove from heat.
- In a medium bowl, combine sugar and cocoa. Add to chocolate mixture and stir to combine. Combine applesauce and egg whites in a separate bowl, and stir into chocolate mixture. Add flour, baking powder, salt and cherries and mix well.
- Pour batter into pan and bake for 30 to 40 minutes, or until knife comes out clean when inserted in middle. Remove from oven and cool completely. Cut into 16 servings. Remove brownies from pan with a flexible spatula.
