3 cups apples, peeled, cored and diced
¼ cup dried cranberries
1 spiced orange tea bag
¼ cup brown sugar
1 Tbsp chopped crystallized ginger
½ Tbsp all-purpose flour
½ tsp cinnamon
Spiced Pecan Topping
1 Tbsp rolled oats
1 Tbsp all-purpose flour
2 Tbsp brown sugar
Pinch sea salt
½ tsp allspice
½ cup finely-ground pecans
- Preheat oven to 350F. Lightly coat 6 4-ounce ceramic ramekins with canola oil spray.
- Soak dried cranberries in hot water with spiced orange tea bag for 10 to 15 minutes. Remove tea bag and discard water.
- In a large bowl, combine apples, cranberries, brown sugar, ginger, flour and cinnamon. Evenly divide the apple mixture into ramekins. Bake for 20 minutes.
- In a small bowl, mix together all ingredients for the Spice Pecan Topping. Top each ramekin with 2 tablespoons of topping and place in oven for an additional 20 minutes, or until topping is crisp and brown. Serve warm.
