Ingredients
1 cup brown rice
2¼ cups lite coconut milk
½ cup raisins
Pinch salt
1 cup sweet red beans
Instructions
- In a large saucepan, combine rice, coconut milk, raisins and salt and bring to a boil. Reduce heat to medium-low and simmer for 50 to 60 minutes. Turn heat off and let sit for 15 minutes.
- Warm beans for 30 seconds in microwave. Add to porridge and mix gently.
