Nutrition Information (per serving)
1 lg egg
4 egg whites
3 Tbsp lite coconut milk
½ cup nonfat milk
¼ tsp nutmeg
½ tsp cinnamon
½ tsp pure vanilla extract
8 slices multi-grain bread
Orange Ginger Syrup
1 Tbsp orange marmalade
1 tsp fresh minced ginger root
½ cup pure maple syrup
1 tsp fresh lime juice
1. In a shallow bowl, combine eggs, milks, spices and vanilla. Mix well.
2. Heat a sauté or grill pan and spray with canola oil spray. Dip both sides of bread in egg mixture. Cook over medium heat until golden brown, about 1 minute on each side.
3. Combine all ingredients for syrup in a small bowl and whisk to blend well.
4. Serve 2 slices toast with 2 tablespoons Orange Ginger Syrup.
