Ingredients 

¾ cup peeled, baked, peeled and mashed sweet potatoes (about ½ lb raw)
1½ tsp melted unsalted butter
1 med egg white, lightly beaten
¾ cup 2% milk
¼ cup all-purpose flour
½ cup whole-wheat flour
1 tsp baking powder
¼ tsp sea salt

Instructions 
  1. Preheat waffle iron.
  2. In a large bowl, combine cooled sweet potatoes, butter, egg white, and milk. Beat until blended. Add flour, baking powder and salt. Stir until smooth.
  3. Spray waffle iron with nonstick vegetable coating.
  4. Pour ¾ cup batter in center of waffle iron and bake until done.
