4 lg eggs
½ cup fresh broccoli, chopped and steamed
4 1-oz lowfat chicken sausage links, nitrate free
½ cup shredded cheddar cheese
4 whole-wheat tortillas, 10-inches in diameter
2 cups fresh fruit
- In a medium sized sauté pan over medium heat, brown sausages. Set aside.
- Lightly coat the same pan with canola oil spray. In a medium bowl, beat eggs with a fork or whisk. Pour eggs into pan and scramble over medium heat until eggs are cooked through.
- Lay tortillas on a flat surface and top with ¼ scrambled egg, ¼ broccoli, 1 sliced sausage and 2 tablespoons cheese. Fold tortilla burrito-style and serve with ½ cup fresh fruit.
