Caribbean French Toast

Ingredients 

½ cup 2% milk
2 Tbsp rum or rum extract
1 lg egg
½ teaspoon cinnamon
Pinch nutmeg
Pinch allspice
8 slices multi-grain bread
2 med bananas, sliced
½ cup diced fresh pineapple
½ cup pure maple syrup

Instructions 
  1. In a shallow bowl, combine milk, rum, egg, cinnamon, nutmeg and allspice. Mix well.
  2. Heat a sauté or grill pan and coat with canola oil spray. Dip both sides of bread in egg mixture. Cook over medium heat until golden brown, about 1 minute on each side.
  3. Top 2 slices of French toast with half sliced banana and 2 tablespoons diced pineapple. Serve with 2 tablespoons maple syrup.
