Cajun Poached Eggs

Ingredients 

Sauce
1 oz ground chicken sausage
¾ tsp extra virgin olive oil
3 Tbsp diced yellow pepper
3 Tbsp diced celery
¼ cup diced onion
1 Tbsp minced garlic
1½ tsp blackening spice
½ tsp sea salt
Pinch cayenne pepper
½ cup diced tomatoes
1 cup tomato juice
¼ cup water
¾ teaspoon fresh lemon juice
¼ teaspoon grated lemon peel

4 lg eggs
4 slices multi-grain bread
4 tsp unsalted butter

Instructions 
  1. Sauté sausage in oil for 2 to 3 minutes, or until cooked through. Add peppers, celery and onion and sauté until onion is translucent. Add garlic, spices and tomato. Sauté 2 to 3 minutes. Add tomato juice, water, lemon juice and lemon peel. Cook until slightly thickened, about 10 minutes.
  2. Poach eggs in simmering water for 1 to 2 minutes, or until cooked through. Toast bread.
  3. Place ¼ cup sauce in a bowl and top with 1 poached egg. Serve with 1 slice of toast and 1 teaspoon of butter.
