Ingredients
½ cup applesauce
¼ cup canola oil
1 cup cane sugar
1 lg egg
⅓ cup egg whites
¼ cup water
1 cup canned pumpkin
2 cups all-purpose flour
½ Tbsp baking soda
¼ tsp sea salt
½ Tbsp ground cinnamon
½ tsp ground cloves
1 tsp ground allspice
¼ cup raisins
2 Tbsp chopped walnuts
Instructions
- Preheat oven to 350F. Lightly coat a loaf pan with canola oil spray.
- In a medium bowl, mix applesauce, oil, sugar, egg, egg whites, water and pumpkin.
- In a large bowl, mix all remaining ingredients. Pour wet mixture into dry mixture and mix well.
- Pour mixture into prepared bread pan and bake for 90 minutes, or until toothpick inserted in the center comes out clean. Remove from oven and let cool on a rack for 5 minutes.
- Remove bread from pan and slice when cooled completely.
