Pumpkin Nut Bread

Ingredients 

½ cup applesauce
¼ cup canola oil
1 cup cane sugar
1 lg egg
⅓ cup egg whites
¼ cup water
1 cup canned pumpkin
2 cups all-purpose flour
½ Tbsp baking soda
¼ tsp sea salt
½ Tbsp ground cinnamon
½ tsp ground cloves
1 tsp ground allspice
¼ cup raisins
2 Tbsp chopped walnuts

Instructions 


  1. Preheat oven to 350F. Lightly coat a loaf pan with canola oil spray.

  2. In a medium bowl, mix applesauce, oil, sugar, egg, egg whites, water and pumpkin.

  3. In a large bowl, mix all remaining ingredients. Pour wet mixture into dry mixture and mix well.

  4. Pour mixture into prepared bread pan and bake for 90 minutes, or until toothpick inserted in the center comes out clean. Remove from oven and let cool on a rack for 5 minutes.

  5. Remove bread from pan and slice when cooled completely.
