Nutrition Information (per serving)
2 lb bone-in bison short ribs or 1 lb boneless bison short ribs
2 cups Mongolian BBQ sauce
¾ lb seasonal wild mushrooms
1 tsp extra virgin olive oil
¼ tsp sea salt
¼ tsp freshly ground black pepper
- Preheat oven to 350F.
- In a large non-stick sauté pan over medium heat, sear short ribs for 1-2 minutes on each side. Place ribs in an oven proof dish. Pour Mongolian BBQ Sauce over ribs and cover tightly. Cook for 2 to 3 hours, or until tender.
- In a large sauté pan over medium heat, sauté mushrooms in olive oil until they begin to brown. Season with salt and pepper.
- Serve 2 ribs with 2 tablespoons Mongolian BBQ sauce and ⅓ cup sautéed mushrooms.
