Thai Peanut Sauce

Ingredients

1/2 cup natural peanut butter
Pinch sea salt
1 Tbsp cane sugar
1 Tbsp lite coconut milk
1 Tbsp fresh lime juice
1 1/4 tsp fresh ginger juice
1/2 tsp rice vinegar
1/2 tsp fish sauce
Dash Tabasco sauce
1/2 cup water
1 Tbsp low-sodium tamari sauce

Instructions

  1. Place peanut butter in a small bowl. Add salt and sugar and mix until almost dissolved. Add coconut milk, lime juice, ginger juice, rice vinegar, fish sauce and Tabasco. Mix well to form a thick paste. Using an electric stand mixer is an excellent option.

  2. In a small saucepan, combine water and tamari and bring to a boil. Whisk in peanut butter mixture. Cook until mixture begins to thicken. Remove from heat.

  3. Serve 2 tablespoons sauce with pasta or as a dipping sauce for chicken kebabs.
