Nutrition Information (per serving)
¾ cup peeled, baked, peeled and mashed sweet potatoes (about ½ lb raw)
1½ tsp melted unsalted butter
1 med egg white, lightly beaten
¾ cup 2% milk
¼ cup all-purpose flour
½ cup whole-wheat flour
1 tsp baking powder
¼ tsp sea salt
- Preheat waffle iron.
- In a large bowl, combine cooled sweet potatoes, butter, egg white, and milk. Beat until blended. Add flour, baking powder and salt. Stir until smooth.
- Spray waffle iron with nonstick vegetable coating.
- Pour ¾ cup batter in center of waffle iron and bake until done.
